Vegan & Gluten-Free Chocolate and Hazelnuts Cookies

 

I've always liked cookies, but I've never found excellent vegan cookies. Often dry, with little chocolate or toppings. For some time now, pastry chefs have been making delicious and generous ones, with salted butter caramel on top, for example. The original recipe of vegan cookies I am sharing with you comes from the excellent vegan bakery Land&Monkey in Paris.

It was made with classic flour, so I adapted it to make it gluten-free. The recipe is easy to make, and the result is very greedy.

Ingredients for 8 large vegan & gluten-free cookies

  • 1/4 cup (60 g) Vegan Butter Softened

  • 1 tbsp + 1 tsp (20 g) Soy Milk

  • 1 cup + 1 tsp (125 g) Rice Flour (or plain flour)

  • 1/2 tsp (3 g) Salt

  • 2/3 cup (110 g) Brown Sugar

  • A pinch (1 g) Baking Soda

  • 3 tbsp (30 g) Roasted Hazelnut

  • 0.70 oz (20 g) Dark Chocolate Chopped

  • 1 tsp (5 g) Icing Sugar

In this recipe, we make the hazelnut paste. This step can be skipped if you buy ready-made hazelnut paste. 

  1. Start by roasting your hazelnuts in the oven for a few minutes until they start to toast lightly. Set aside 2 tbsp for step 5. You can break the hazelnuts with a knife or by putting them in a cloth and tapping them with a heavy object.

  2. Mix 1 tbsp (10 g) of roasted hazelnuts with the icing sugar.

    For more simplicity, I advise you to prepare a larger quantity, for example, 1 cup + 1/3 cup (200 g) of hazelnuts for 3/4 cup + 1 tbsp (100 g) of icing sugar. You will be able to keep the surplus as a paste spread or to make cookies again.

  3. In a bowl, combine the butter at room temperature with the brown sugar. When the mixture is uniform, add the hazelnut paste and soy milk.

  4. Mix well, then add the rice flour, baking soda, and salt. Continue to mix and add the roasted hazelnut chips and chocolate pieces. You should obtain a homogeneous dough.

  5. Make portions of about 1.58 oz (45 g) and place them on a baking tray covered with baking paper. Flatten them a little.

  6. Bake at 170° in a traditional heat oven for 18 to 20 minutes, depending on your oven. The cookies will be a little soft. It is entirely normal. once they have cooled down, keep them in an airtight container outside.
