Vegan & Gluten-Free French Crepes

 

The French crepes are partly similar to American pancakes. They are broader and thinner compared to pancakes, which are thicker and smaller.

The recipe shared here is vegan and gluten-free. Crepes are lighter and more easily digestible than the classic one, and you'll see that no one will notice. Even if you are not vegan, you can still make them and leave me a comment under this recipe.

Making and eating pancakes is a very comforting and regressive thing to do. It is a pleasant moment to share with the family. There is no limit to eating them with toppings of your choice: spread, sugar, jam, banana, whipped cream.

Ingredients for Vegan & Gluten-Free French Crepes

  • 1 cup + 2/3 cup (200 g) Wholemeal Rice Flour

  • 1/2 cup (60 g) Wholemeal Cornflour

  • 1/2 cup (60 g) Cornstarch

  • 2 pinches salt

  • 3 3/4 cup + 1/3 cup (620 g) Soy Milk

  • 4 tbsp (4 c. à soupe) Coconut Oil or other

  • 1 tbsp (1 c. à soupe) Vanilla Extract (optional)

    You can add other ingredients such as orange blossom water, rum, bourbon to the preparation. Adapt it according to your preferences.

Instructions for Vegan & Gluten-Free French Crepes

Mix the dry ingredients (flours, cornstarch, salt), then add the soy milk very gradually, stirring with a pastry whisk so that there are no clumps. Then add the oil and vanilla extract or other ingredients as orange blossom water, or alcohol. Blend again. Leave to stand for at least 1 hour under a kitchen towel.

Heat a crepe pan with coconut oil over high heat. Pour a thin layer of batter and cook over medium heat. When the edges begin to brown slightly and peel off, lift the crepe with a spatula to turn it over. Be careful, as the second side cooks faster; keep a close eye on the coloring.

Put a little coconut oil between each crepe.

To keep your crepes warm and soft, cover them with a towel as you go along.
